Step 1: Cook the Noodles
- In a large pot, bring water to a rolling boil. Add the dried noodles and cook according to the package instructions until they’re al dente. Once cooked, drain and set aside, but don't rinse; you want some of that starch to help the sauce stick later.
Step 2: Prepare the Ingredients
- While the noodles are cooking, it’s time to prep the rest of your ingredients. Slice your steak into thin strips against the grain. In a mixing bowl, toss the steak with cornstarch and Chinese five spice powder until it’s well-coated. This not only flavors the beef but also helps to give it a nice crisp.
- Next, chop your veggies. With the bell peppers and snap peas ready to go, slice your spring onions, and mince the garlic and ginger. It might seem like a lot of prep, but having everything ready makes the cooking part go smoothly!
Step 3: Make the Sauce

- With the pan still hot, add the green peppers, snap peas, and chili. Stir-fry for about 2 minutes, maintaining that high heat. Then, toss in the garlic, ginger, and spring onions. Sauté for another minute until fragrant. You want the veggies to soften just a bit while still retaining their crunch.
Step 7: Combine Everything
- Now, return the beef to the pan, followed by the sauce you prepared. Stir to coat all the meat and veggies until everything is glossy and heated through—about a minute more.
Step 8: Toss the Noodles
- Finally, add the cooked noodles to the pan. Use tongs or your spatula to toss everything together until the noodles are thoroughly mixed with the beef and vegetables. Taste and adjust seasoning if needed.
Step 9: Serve and Garnish
- Serve the stir fry hot, topped with additional spring onion and more chili if you like a kick. Enjoy!
