Step 1: Season the Beef
- Begin by patting the beef chunks dry. Sprinkle them generously with kosher salt and freshly ground black pepper, making sure they are evenly coated for perfect seasoning. This step lays the foundation for building flavor right from the start.
Step 2: Sear the Beef
- In a Dutch oven, heat the vegetable oil over high heat. Once it’s shimmering, add half of the seasoned beef. Sear the chunks on all sides until they are deep brown, about 4-5 minutes. This browning process creates a stunning depth of flavor. Remove the beef and set it aside in a bowl. Repeat with the remaining beef, then turn off the heat.
Step 3: Sauté the Onions
- With the Dutch oven still warm, add the butter and sliced onions, seasoning them with a pinch of salt. Turn the heat to medium-high. Stir often, and wait for the onions to soften and turn golden brown—this should take about 5 minutes. Those caramelized edges will add a lovely sweetness to your dish.
Step 4: Add the Flour and Flavor Additions

Step 5: Simmer the Beef
- Add in the seared beef along with any juices collected in that bowl. Stir everything together so the beef is coated in the flavorful mix. Cover and reduce the heat to low, letting it simmer for about 2 hours. At this low and slow pace, your beef will become incredibly tender!
Step 6: Cook the Noodles
- After the beef has simmered nicely, take a colander and remove the tender beef to a bowl to rest. Bring the remaining liquid in the Dutch oven back to a boil over high heat. Once boiling, throw in the egg noodles and cook, stirring occasionally, for about 30 seconds less than what’s indicated on the package. This step helps avoid mushy noodles.
Step 7: Combine It All
- Once the noodles are almost cooked, stir the reserved beef back into the pot and reduce the heat to low. Allow everything to simmer together until the noodles are cooked to your liking and the beef is warmed through.
