Ingredients

For the Crust:
  • 1 unbaked buttery pie crust or all-butter pie crust
  • 1 large egg, beaten with 1 tablespoon whole milk or cream egg wash
For the Filling:
  • 3/4 cup unsalted butter 12 Tbsp; 170 g, softened
  • 4 -ounce Two quality bittersweet or semi-sweet chocolate bars 113 g each, finely chopped
  • 1 cup heavy whipping cream 240 ml
  • 4 large free-range eggs
  • 1 cup white granulated sugar 200 g
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon espresso powder optional, enhances chocolate depth
For the Topping:
  • 2 tablespoons powdered sugar or superfine granulated sugar
  • Pinch of sea salt optional, enhances sweetness
  • 1 cup heavy whipping cream 240 ml
  • 1/2 teaspoon pure vanilla extract
  • Chocolate curls or shaved dark chocolate optional, for garnish

Method

Step 1: Prepare the Pie Crust
  1. Start by preheating your oven to 350°F (175°C). Roll out your pie crust and place it in a pie pan. Use the egg wash to brush the edges. This helps the crust turn golden brown and adds beautiful color. Bake it for about 20-25 minutes, or until it’s done. Let it cool completely.
Step 2: Melt the Chocolate
  1. In a small saucepan, over low heat, melt the chopped chocolate. Stir occasionally to prevent burning. Once melted and smooth, remove it from heat and set aside to cool slightly.
Step 3: Whip the Butter
  1. In a large mixing bowl, beat the softened butter until it’s light and fluffy. This process takes about 3-5 minutes. Your arm might get sore, but trust me, it's worth it!
Step 4: Combine the Ingredients
  1. Gradually add the sugar to the whipped butter, mixing well. You want it to become light and airy. Now, add in the vanilla extract and the slightly cooled melted chocolate. Beat the mixture until it’s combined smoothly.
Step 5: Add the Eggs
  1. One at a time, add the eggs into the chocolate mixture. Beat well after each addition, ensuring each egg is incorporated before adding the next. This step is crucial for achieving that signature silky texture.
Step 6: Whip the Cream
  1. In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold one-third of this whipped cream into the chocolate mixture to lighten it up. Then, gently fold in the rest of the cream, being cautious to maintain its fluffiness.
Step 7: Fill the Crust
  1. Pour the chocolate mousse filling into the cooled pie crust. Smooth the top with a spatula to create an even surface. Cover it with plastic wrap and refrigerate for at least 4 hours or overnight, allowing it to set properly.
Step 8: Prepare the Topping
  1. Before serving, whip together the remaining heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread or pipe it over the pie as a luscious topping. You can garnish with chocolate curls or shaved chocolate for that fancy touch!

Notes

  • Chill Your Tools: If you want extra fluffy whipped cream, chill your mixing bowl and beaters in the refrigerator. Cold tools help the cream whip faster.
  • Quality Ingredients Count: Use high-quality chocolate bars for the filling. Buy a variety you enjoy eating on its own!
  • Don’t Rush the Cooling: Ensure the pie has cooled fully after baking. A warm crust can affect the pie’s texture as it sets.
  • Experiment with Flavors: Want to switch it up? Try adding a splash of almond extract or orange zest to the filling for an unexpected twist.
  • Double the Recipe: Planning for a crowd? Double the recipe for a larger pie or make mini versions for individual servings.
