Ingredients
  

For the Strawberry Topping:
  • 1 teaspoon cornstarch powder
  • 1 tablespoon pure honey
  • 1 pound fresh, ripe strawberries
  • Juice from half a lemon
  • 1/4 cup granulated white sugar 50g
  • 1 teaspoon finely grated lemon zest
For the Graham Cracker Crust:
  • 1/2 cup unsalted butter, melted and cooled 110g
  • 1/3 cup granulated white sugar 70g
  • 2 cups finely ground honey graham cracker crumbs, approx. 2 sleeves, see notes for gluten-free option 280g
  • 1/2 teaspoon ground cinnamon
For the New York Cheesecake:
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons cornstarch
  • 1 cup full-fat sour cream, softened to room temperature 250g
  • 8 -ounce Four blocks of full-fat Philadelphia cream cheese, softened to room temperature
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon almond extract
  • 4 large eggs plus 1 egg yolk, at room temperature
  • 1 1/2 cups granulated white sugar 300g

Method
 

Step 1: Prepare the Strawberry Topping
  1. Start by preparing the strawberry topping. In a medium saucepan, combine the strawberries, lime juice, honey, sugar, and lemon zest. Heat over a medium flame until the strawberries soften, and the mixture thickens slightly, about 5-7 minutes. 
    If you want a thicker consistency, mix cornstarch with a bit of water and add to the strawberries. Allow it to cool. This topping will add a refreshing twist to your cheesecake.
Step 2: Make the Graham Cracker Crust
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, blend the graham cracker crumbs, sugar, and cinnamon. Stir in the melted butter until the mixture resembles wet sand. 
    Press this mixture into the bottom of a 9-inch springform pan, making sure it's even and compact. Bake the crust for about 8-10 minutes, until slightly golden. Let it cool completely before adding the filling.
Step 3: Prepare the Cheesecake Filling
  1. In an electric mixer, beat the softened cream cheese on medium-high until smooth. Scrape down the sides of the bowl to ensure consistency. Gradually add the sugar and cornstarch, mixing until combined. Add the vanilla extract, almond extract, and lemon juice; mix well.
    Next, add the sour cream, blending until the mixture is smooth and creamy. Finally, add the eggs one at a time, mixing well after each addition. Make sure not to overmix, which can cause cracks in the cheesecake during baking.
Step 4: Combine and Bake
  1. Pour the cheesecake filling over the cooled graham cracker crust. Smooth the top with a spatula for an even surface. Bake the cheesecake for about 50-60 minutes. You’ll know it’s ready when the edges are set, and the center has a slight jiggle but is not liquid. Turn off the oven, crack the door slightly, and let the cheesecake cool inside for about an hour. This step helps prevent cracking.
Step 5: Chill and Serve
  1. Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight. When you’re ready to serve, release it from the springform pan and slice. Drizzle with the strawberry topping or serve it plain.

Notes

  • Room Temperature Ingredients: Ensure your cream cheese and eggs are at room temperature to achieve a smooth batter.
  • Don’t Overmix: Overmixing can introduce air bubbles, leading to cracks during baking. Mix until just combined.
  • Bake with a Water Bath: For an ultra-creamy texture, place your springform pan inside another larger pan filled with water while baking.
  • Chilling: The longer you chill the cheesecake, the better the flavors meld. Overnight is ideal.
  • Topping Alternatives: Get creative with toppings. Consider fresh fruit, whipped cream, chocolate drizzle, or even a caramel sauce.
