Ingredients
  

No-Bake Cheesecake Layer:
  • 3/4 cup granulated sugar
  • 16 ounces cream cheese, softened to room temperature
  • 1 teaspoon pure vanilla extract
  • 8 ounces thawed sweetened whipped topping
Strawberry Layer:
  • 6 cups fresh sliced strawberries
  • 2 teaspoons fresh orange zest
  • 2 cups boiling water
  • 6 ounces strawberry gelatin powder
  • 1 tablespoon freshly squeezed lemon juice
Crust Ingredients:
  • 3/4 cup unsalted butter, melted
  • 2 cups finely ground pretzel crumbs
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar

Method
 

Step 1: Prepare the Crust
  1. Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine the finely ground pretzel crumbs, melted butter, cinnamon, and sugar. 
    It should resemble wet sand. Press this mixture firmly into the bottom of a 9x13 inch pan. Bake this delectable crust for about 10 minutes until it’s set and golden. Let it cool completely.
Step 2: Make the Cheesecake Layer
  1. In a large bowl, beat together softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the thawed whipped topping until fully combined. This light, airy mixture is going to be heavenly in the next layer. 
    Spread the cheesecake layer evenly over the cooled pretzel crust. Make sure you reach all the corners. Pop this back in the fridge while you prepare the strawberry layer.
Step 3: Create the Strawberry Layer
  1. In a medium bowl, mix the boiling water with the strawberry gelatin powder. Stir until dissolved. Add the lemon juice and fresh orange zest, followed by the sliced strawberries. 
    Let this mixture cool for about 15 minutes. It’s crucial to not pour hot gelatin over the cheesecake layer, as it could cause a melting disaster.
Step 4: Assemble the Squares
  1. Carefully pour the strawberry mixture over the cheesecake layer. Spread it evenly. Now it’s time for the magic of refrigeration. Cover the dish and let it chill for at least 4 hours, or best overnight, allowing the layers to set firmly.
Step 5: Slice and Serve
