- Drain the sweet potatoes and pat them dry. In a greased baking dish, start layering the sweet potatoes. Spread a portion of the slices in a uniform layer, slightly overlapping them. Next, pour a portion of the creamy mixture over the first layer.

- Sprinkle a generous handful of cheese over that creamy layer. Repeat this process: add another layer of sweet potatoes, then cream, and cheese. Continue until you have used all the sweet potatoes, finishing with a layer of cheese on top.

- Cover your baking dish with foil and place it in the preheated oven. Bake for about 45 minutes. This allows the sweet potatoes to soften perfectly. After that time, remove the foil and bake for an additional 15-20 minutes until the top is bubbly and golden brown.

- Once it’s out of the oven, let the gratin rest for at least 10 minutes. This helps the layers set and makes it easier to slice.
