  • 1 medium onion, peeled and thinly sliced can be cut into chunks
  • 4 teaspoons coarse sea salt or kosher salt
  • 4 cups distilled white vinegar apple cider vinegar can be substituted
  • 2 cups granulated white sugar
  • 2 teaspoons yellow mustard seeds
  • 2 teaspoons celery seeds
  • 3 teaspoons ground turmeric
  • 1 teaspoon dried dill
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon crushed red pepper flakes

Method
 

Step 1: Prepare the Zucchini
  1. Start by washing your zucchinis thoroughly under cool water. No one wants dirt in their pickles! Next, slice them into thin rounds or spears—whichever you prefer. Thin slices will soak up the brine more effectively, so consider that.
Step 2: Prepare the Onion
  1. Peel and slice the onion. You want them to be thin as well; this allows them to absorb the flavors from the brine. Set aside both the sliced zucchini and onion.
Step 3: Make the Brine
  1. In a large bowl, combine the vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, dill, peppercorns, and red pepper flakes. Stir the mixture until the sugar and salt are fully dissolved. That sweet and tangy aroma will start wafting through your kitchen!
Step 4: Mix Zucchini and Onion with Brine
